An Apple A Day…

I LOVE AUTUMN...

 

Autumn is the PERFECT season for APPLES 😀

As I sit here writing this latest blog post, listening to some great Praise & Worship music I’m grateful for the view from my kitchen. After living here 1 year (already) I’ve recently moved the kitchen around so that when I work I get to look at the view out of the window. It’s not that I’ve never seen these views before, I’m just taking the time to appreciate them…and out of the window I see a beautiful blue sky, light & dark green trees, flowers and the beautiful City that I live in called London.

This morning I woke up drained from a long nights sleep, with a headache and unshakeable fatigue. Thank God for Floradix!

And voila! Breakfast apple bake (or dessert, or snacks) or whenever you feel like it lol This lasted me 3-4 days. Enjoy :)

Recently, I was set a task to leave work everyday at 5:30pm and get home at a decent time. Recently I started a new job, and as you can imagine the new working hours have caused a major imbalance in my work and life balance. Well not anymore…;)

Leaving work at 5:30pm has been a blessing! I’ve had more time to cook, and since I’m on a social media hiatus, it’s been even BETTER than I expected. I’ve managed to get more done in the evenings, watch my favourite shows, go to sleep at a decent time and just enjoy the evenings and my own company more. More so, I’ve stopped thinking ‘it’s  just me at home’. Yes, it is just me at home, which is even more of a reason to enjoy my evenings because I’m just as worth a healthy, non-late cooked dinner, a bath, book and bed as if I were whether I had someone to share my home with or not.

Without a doubt, my next post shall totally be about what my first year taught me…

However, in one of my evenings last week, I managed to make my FAVOURITE breakfast go to and I thought I’d share it with you all.

Here goes:

Peel 3x medium sized apples. I use braeburn as they've come to be my favourite apple due to their subtle sweetness.

Once peeled, dice all the apples into small pieces

Place the apples in a baking / sandwich tin. Add some ground mixed spice, and place into a pre-heated 180degrees oven with a dash of water. The water softens the apples. Whilst the apples are heating / softening, melt 2 tablespoons of non-salted butter and the same quantity of good honey. Stir and bring to a simmer.

Add porridge oats to the butter and honey mix. Make sure the oats are coated in the butter & honey. Bring to your desired consistency. I like mine sort of soft, but also crunchy :) Cover the apples with the topping and place back in the oven for about 45mins (or until golden brown).
